Homemade Shrimp/Avocado/Cheese/Spinach Sandwich Recipe! :D
What You'll Need:
1 Avocado
2 slices of Pumpernickel Bread
1 tbsp of Chipotle Pepper Sandwich Spread
2 slices of Muenster Cheese
1 handful of Spinach
7 Shrimp

While you're waiting for your bread to toast and your cheese to melt, spend your time prepping the other foods :) I start by cutting the avocado; first into halves and then those halves into halves, and so on. In the second picture you'll see how I cut them, and to get the avocado out I just kinda stick my thumb into the middle and pull outwards and the avocado just comes out from the skin, its pretty easy!
Once your toast and cheese is done, go ahead and place shrimp on a baking sheet like this and then pop those in the oven. I do this so the shrimp are nice and warm with everything else. I'm lazy so I buy pre-cooked shrimp and as long as they're eaten within a couple days, they taste just fine. But if you're particular, go out and buy some raw shrimp!
*a little tip- if you've never cooked shrimp before, a good way to know if they're done is when they're nice and pink and in the shape of a C (C-cooked, easy to remember!) and if they're in the shape of an O that means overcooked! (O-overcooked, very easy to remember :3)
Next, just slater on a knife full of chipotle pepper sandwich spread! It adds a nice spicy flavor to the sandwich but not like SPICY spicy. Kinda just tangy, it's good! trust me!
Once you put on the spread, just peel the avocados out like I mentioned before and lay them evenly on the sandwich. Now obviously I ran out of space and had to lay one on top, and it may not look as pretty but it works! You never really realize how much avocado is in an avocado until you try using a full on one sandwich >.< Today I tried adding a sprinkle of Old Bay on the shrimp but it honestly didn't make much of a difference because the chipotle pepper spread pretty much dominates your taste buds as is. Then, finally, just grab a little handful of baby spinach, and you're done!
